Potbelly Sandwich Shop calls itself a neighborhood eatery, even though there are more than 400 of the restaurants in the U.S. and internationally.
Potbelly’s neighborhood feel is the vibe Fort Collins-based Brinkman Partners wants to bring to its new 10-acre Harmony Commons project at the southwest corner of Harmony Road and Lady Moon Drive.
The publicly traded company — not affiliated with The PotBelly restaurant in Red Feather Lakes — is the latest retailer to join the under-development retail development and will be on the east end cap across the patio from an anticipated brewpub.
Construction is underway on the first two buildings at Harmony Commons, with a combined 26,000 square feet. Josh Guernsey of Brinkman said the first phase will open in the spring or early summer next year.
